Egg Salad

… love it or hate it?!?

We *LOVE* it. Here is how I make mine.
(Disclaimer: this is my grandma’s recipe… which means you can play around with the measurements, but never the ingredients.)

• Mash hard-boiled eggs until they are the consistency you prefer. I like the pieces fairly small.
• For around 8-10 hard boiled eggs you add 1/2 cup of Dukes Mayonnaise & 3/4 cup of Mt. Olive Pickles sweet salad cubes (strained so you don’t get the juice).
Salt & pepper to taste. I use around 1/2 tsp salt & several cranks of pepper. You can also add a dash of paprika!

Again, play around with the consistency you like & feel free to do less pickles, but I think it is delicious this way!!
