White Chicken Chili

White Chicken Chili is my favorite. I honestly love any and every way to make it. Here is my current recipe. If you have any good ones to share please do so!!

Ingredients//

- 1 small yellow onion, diced
- 1 small jalapeño, diced
- 3 cloves of garlic, minced
- 1 box of low-sodium chicken broth
- 2 (4oz) cans diced green chilies
- 2 cans of great northern beans or cannellini beans, drained. You can smash some of the beans if you want a thicker soup.   
- 1 cans of sweet corn, drained
- 2-3 boneless skinless chicken breasts, cooked & shredded (or 1 meat from 1 rotisserie chicken. This time I actually used 6 chicken thighs I made in the air fryer.
- 1 tsp cumin
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp oregano
- ½ tsp red pepper flakes (can leave these out)
- Salt & pepper to taste
- ½ cup sour cream + a splash of milk or heavy cream
- Top however you want: avocado, sour cream, tortilla chips, lime juice & Monterey jack cheese are all great choices! 


Directions//

Saute onion, jalapeño & garlic over medium heat in olive oil. Add in broth, beans, corn, seasonings & cooked chicken. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes. Remove from heat & stir in sour cream, milk or heavy cream. Top with avocado, shredded cheese, sour cream & chips.
